Ambala is a city choc full of dhabas. It sits on the old and historic Great Trunk Road that runs from Delhi to Amritsar. Now known as National Highway 1, the road has been carrying traffic since the days of the Raj.
The most famous foodie destination in Ambala is Puran Singh’s dhaba – but now several establishments have opened with the same name and no-one’s entirely clear which one is the original. But one of the dishes you’ll find in all of them is the dhaba chicken curry. Made with chicken on the bone, and cooked with desi ghee, tomato and plenty of spice it’s simply irresistible.
At Delhi Grill we have re-created this classic dish. We slow cook chicken drumsticks in desi ghee, tomatoes and plenty of whole and ground spices. The slow cooking ensures that the spice flavours penetrate the chicken, but it remains succulently juicy.
